Every year after Easter’s tidal wave of pastel eggs and stuffed rabbits finally dies down, stores and homes are left with leftover easter candy that tends to sit until it’s either eaten or thrown away. This year, instead of tossing that leftover candy, transform it into a delicious dessert with these simple recipes.

Peep’s S’mores
Cozy campfires, summer nights, and warm blankets are some images called to mind when considering traditional s’mores. These luminescent Peeps s’mores, however, are anything but traditional: a delicious blend of dark chocolate, cinnamon graham, and sugary Peep’s marshmallows, these s’mores accentuate the famous summer treat with a little bit of springtime flair.
Ingredients
12 ounces dark chocolate chips
20 Peeps marshmallows, in different colors
1 box cinnamon sugar graham crackers (about 15-20 crackers)
Directions
1. Preheat oven to 350 degrees F.
2. Line baking sheet with parchment paper.
3. Break the graham crackers in half and arrange them cinnamon-side-up on the parchment paper.
4. Melt half of the dark chocolate chips. You can use a double boiler to do this, or you can simply microwave the chocolate, stopping to stir every 45 seconds.
5. Spread about a spoonful of melted chocolate onto each graham cracker.
6. Place one Peep on each cracker, alternating as many colors as you can.
7. Place the baking pan into the oven and bake for roughly five minutes, until the Peeps have softened.
8. Melt the second half of the chips. Heating up the chocolate in halves ensures that it doesn’t cool and harden before all of the s’mores have been made.
9. While the baking pan cools, take graham crackers and cover with more melted chocolate (cinnamon side down). Once the cracker is coated, place the cracker chocolate-side-down onto the Peeps and press gently.
10. Let cool for 10 – 15 minutes, then dig in!
Cadbury Egg Bark
Cadbury Eggs have been a focal point of Easter candy for decades. Apart from the original Cadbury Creme Egg, Cadbury has created multiple variations of the Cadbury egg, including in caramel, chocolate, and the miniature form. This Cadbury Egg Bark combines three types of Cadbury Eggs into a crunchy and creamy Easter treat.
Ingredients
8 ounces dark chocolate
4 ounces milk chocolate
4 Cadbury Creme eggs
4 Cadbury Caramel eggs
5 ounces Cadbury White Chocolate Mini Eggs
Directions
1. Line baking sheet with parchment paper.
2. Melt all of the dark chocolate and half of the milk chocolate (2 ounces) in one bowl. This can be done either by heating up a pot of water and putting the chocolate into a smaller pot inside, or by microwaving the chocolate, stopping to stir every 45 seconds. Set half aside.
3. When the chocolate is melted completely, pour the first half of onto the baking sheet, then spread out smoothly with a spoon to the corners of the paper.
4. Place the Cadbury White Chocolate Mini Eggs in a plastic bag, and using a mallet or a rolling pin, crush them into bits. Sprinkle the crushed Mini Eggs over the bark evenly.
5. Carefully break the creme and caramel eggs into pieces. Evenly crumble the pieces over the bark.
6. Now, take the second half of the melted chocolate and pour it over the crushed eggs. Try to pour evenly and cover up as much area as you can.
7. Melt the remaining milk chocolate and drizzle over the bark.
8. Set the baking sheet in the freezer for at least fifteen minutes. Break the bark into pieces and enjoy!
