While some of the biggest moments in HBO’s Game of Thrones are defined by blood and connection, food has a special place in both the books and the TV series. The following recipes are so simple, Jon Snow would know how to prepare them.
Winterfell Beer and Beef StewServes 6 A hearty meal worthy for a warrior after a battle, (or after marathoning the last season), this chunky beer braised beef and root vegetable stew is inspired by the mutton pie Arya serves Tywin Lannister in Season Two. Serve it in a hollowed out loaf of bread for extra dragon approval.
Ingredients: 2 pounds beef brisket, or chuck roast, trimmed and cut into 1-inch dice Coarse salt and pepper to taste 2 tablespoons flour 5 tablespoons canola oil 1 ½ cups white or red pearl onions, peeled 2 medium-sized carrots, peeled and diced 1 medium-sized celery root, peeled and diced 1 large turnip, peeled and diced 1-2 large russet potatoes, peeled and diced 2 cloves of garlic, peeled and minced 2 bottles brown lager or ale 2 cups beef broth or stock 2 teaspoons malt vinegar 4 springs fresh thyme, leaves picked from the stem 2 springs fresh rosemary, leaves picked from the stem and roughly chopped Round loaves of sourdough or wheat bread, hollowed
Instructions:
Season beef with salt and pepper, then lightly sprinkle with flour. Add the canola oil to a big pot and heat until its smoke point, or when it is shimmery in the pan. Add the beef to the pan in small batches, searing each side and then removing each batch once it is finished.
When all of the brisket is browned and removed from the pot, add vegetables. Mix and cook vegetables in the residual beef fat, stirring frequently, allowing the onion to brown — about ten minutes. Remove vegetables. Add minced garlic to the pot, allowing it to become fragrant and just softened, then return the beef to the pot and add the lager.
Bring beer to a boil, then reduce the heat, skimming any fat from the surface using a spoon or ladle. Reduce the beer’s heat by 2/3. Then, add the beef broth or stock.
Cover and let simmer over very low heat until meat starts getting tender. After about one hour, add potatoes and browned vegetable mix. If the stew looks a little dry, add another cup or two of beef broth. Check stew again after another hour. Once the meat is fork-tender, add vinegar and adjust seasoning to taste. Stir in the herbs. Serve in a hollowed-out bread bowl.
Sansa’s Favorite Lemon CakesMakes a dozen cupcake-sized pound cakes
Delicate and beautiful Sansa Stark-Lannister loves lemon cake, an exquisite dessert for the lords and ladies of Kings Landing. Slightly sweet and tangy citrus glaze over handheld pound cakes are a great watch party snack. If you’re more into swordplay than baking, use a premade pound cake mix, but don’t skimp on the two-ingredient glaze. The fire god commands it.
Ingredients:Cake
1 cup sugar
½ cup butter, melted
2 eggs, well-beaten
1 tablespoon lemon juice
1/4 teaspoon salt
1 ½ cups flour
1 teaspoon baking powder
½ cup milk
Glaze
1/3 cup lemon juice
¼ cup confectioner’s sugar
Zest of 1 lemon, optional
Instructions
Cake Mix together sugar and butter. Add eggs and lemon juice, and then mix well. Mix in salt, flour and baking powder. Once incorporated, mix in the milk. Following this order will prevent the lemon juice from curdling the milk.
Bake the mixture in a well-greased cupcake pan at 325 degrees Fahrenheit for 15 to 20 minutes, or until golden.
Glaze Mix lemon juice and sugar together. Mix in lemon zest. Once the cake is finished baking, poke holes in the top of the mini cakes and drizzle the glaze over the top. Serve warm or cool!
Iced Milk with Honey and DatesServes 3
A quick and easy spiced milk drink sweetened with honey, a dash of vanilla extract and cinnamon. Although Ned Stark preferred mead or beer to this sweet drink, we think it’s spot on with a side of dates, or even some of Sansa’s lemon cakes.
Ingredients:
4 cups milk
2 Tablespoons honey
1 Teaspoon vanilla extract
½ Teaspoon cinnamon, to taste
Ice
Package of dates for snacking
Instructions:
In a saucepan, warm milk over medium-high heat, stirring constantly to prevent scalding. Add honey, vanilla and cinnamon. Stir to blend.
Remove from heat and let cool. Serve milk over ice with a side of dates on your finest silver platter.
