Avocados are fondly referred to as nature’s butter. This gives them a certain versatility, making them suitable for a slew of different recipes: tacos, smoothies, guacamole and now, fudge. This recipe is so rich with cocoa that one bite will satisfy those intense, midterm-induced chocolate cravings. With a smooth yet dense texture that melts on the tongue, it’s sure to be your new go-to.
Ingredients
1 tsp. coconut oil
1½ cup vegan chocolate chips
⅔ cup coconut cream
¾ cup of unsweetened cocoa
¾ cup sugar
2 tsp. vanilla
3 avocados, cut
Handful of your favorite nuts, chopped (optional)
Fresh rosemary, minced (optional)
Coarse sea salt (optional)
Directions
Coat square pan in coconut oil so fudge does not stick.
In a medium pot, add chocolate chips, coconut cream, cocoa, sugar and vanilla.
Melt ingredients and stir frequently to prevent the mixture from burning.
Blend 3 avocados until smooth, using a blender or food processor for optimal results.
Add the melted chocolate mixture.
Add nuts. Optional: Lightly sprinkle rosemary and sea salt on top of fudge.
Store in freezer and let cool for 3 hours.
Cut off a piece in between study sessions!
