Nestled in the corner of West Campus’s Rancho Rio Eatery sits a food truck whose owner has reinvented a childhood food staple: macaroni and cheese. Mac Daddy’s food trailer is owned and operated by Christoph Terrell, who says the business has been great since he first opened in September. With mac and cheese medleys from bacon and jalapeño to ground beef and special spices, there isn’t anything on the menu you wouldn’t want to try. Nothin’ sounds better than a warm bowl of cheesy goodness after a night out, and the after-hours line at Mac Daddy’s proves it.
